You know, when you want something sweet after dinner? Well here you are. Clean and raw mint slice. Without any nasties or refined sugar, so you won’t wake up the next morning feel yuk. Next time I make this, I’ll add a little spirulina powder in the filling for a rich green colour.
The main ingredient in the filling is Cashews which are rich in fibre, heart-healthy fats, and plant protein. They're also a good source of copper, magnesium, and manganese — nutrients important for energy production, brain health, immunity, and bone health (healthline.com).

BASE:
1 cup almond meal
½ cup hazelnut meal
½ cup cacao powder
6 dates
FILLING:
1½ cups cashews ( soaked for 3-4 hours or overnight)
½ can coconut cream
2 TBSP cup maple syrup
1 TBSP coconut oil
juice ½ lemon
1 cup mint leaves
Few drops peppermint oil
½ tsp spirulina for colour
CHOCOLATE TOPPING:
¼ cup cacao powder
2 tablespoons coconut oil
¼ cup maple syrup
Method
Pls base ingredients in a high speed blender until well combined and pliable. Press down evenly into the base of a lined square baking dish and set aside.
For the filling add all the filling ingredients into a high-speed blender and blend until smooth.
Pour over base and smooth out with spatula and place in the freezer to set (about 3 hours).
For the topping, mix all ingredients until well combined and pour over top until evenly coated.
Store in freezer
