Carrot cake overnight oats

What I’m eating for breakfast - carrot cake overnight oats. Serves 2.


Ingredients

1 cup oats

3 tbl chia seeds

Oat milk

1 finely grated carrot

Pinch of ginger, cinnamon

Pinch salt

Chopped dried apricots

Handful pistachio nuts

2 tbls favourite nut butter


Method

Mix oats, chia, carrot, spices and enough milk to cover. Place in jars, in fridge over night. In the morning, give a good stir, top with apricots, pistachio and nut butter.


Dig in.
