I don’t buy salad dressings. Ninety-nine percent of dressings available – including the refrigerated varieties and the innocent-sounding vinaigrettes – are full of rubbish ingredients. When I grocery shop, I avoid highly-processed, non-nutritious foods and ingredients – salad dressings included. First, I ignore the front label since its purpose is to convince you that the product is “healthy,” regardless of the truth that lies within the box. Instead, I head straight for the ingredient list on the back label – and I encourage you too.
But I can’t eat a salad or a bowl of vegies without an incredibly delicious dressing – it’s the dressing that makes the meal delicious, so I make my own. A good dressing is probably one of the most easiest thing to make in the kitchen.
Here are two of my absolute favourites, both make enough to dress 4 dishes and are utterly delicious despite the simplicity.
Curried houmous dressing
4 tbls good quality houmous
2 tbls lemon juice
1 tsp approx. curry powder
1 tsp maple syrup
Enough water for a pouring consistency
Add all ingredients in a small bowl or jar and mix to combine
Peanut butter dressing
4 tbls good quality peanut butter without additives
2 tbls lemon juice
1 clove garlic crushed
1 cm piece ginger finely chopped
1 tsp maple syrup
Enough water for a pouring consistency
Add all ingredients in a small bowl or jar and mix to combine
