Sweet potato bowl with peanut dressing


If you look at this dish, its so simple. Salad made easy and simple, but the ingredient that takes this over the edge is the peanut dressing.


Ingredients


Salad

2 sweet potatoes

1 tsp oil

1/2 purple cabbage, sliced finely

2 carrots, grated

Bean sprouts

Spinach leaves

Coriander, chopped

1 avocado

Nigella and sesame seeds (optional)

Lime wedges

Sea salt


Peanut butter dressing

4 tbls good quality peanut butter without additives

2 tbls lemon juice

1 clove garlic crushed

1 cm piece ginger finely chopped

1 tsp maple syrup

Enough water for a pouring consistency


Method

Preheat oven to 180 deg.


For the sweet potato chips, cut into chips. Place into a bowl, toss with oil and salt. Place on a parchment lined tray and bake in oven for about 20 mins.


For the dressing, add all ingredients in a small bowl or jar and mix to combine.


Grab a couple of bowls, and place your sweet potato fries in the bowl and fill with remaining salad ingredients. Top with avocado, sesame and nigella seeds, lime wedges and dressing.
