Double strawberry popsicles


There's nothing like a homemade treat to keep cool as we welcome the warmer months. Enter our Strawberry Popsicles – a blend of ripe strawberries, honey, and a dash of Greek yogurt for a creamy twist.


But what truly sets these popsicles apart? It's all about the toppings. After freezing the strawberry base to perfection, add a sprinkle of crushed freeze-dried strawberries and almonds for a textural thrill.


These Strawberry Popsicles are your passport to summertime joy. They're not only a visual delight but a healthier way to stay refreshed. Get creative with your toppings and let the vibes flow!


Ingredients:

For the Strawberry Base:

  • 2 cups fresh strawberries, hulled and halved

  • 1/4 cup honey or maple syrup (adjust to taste)

  • 1/2 cup Greek yogurt (optional, for creaminess)

  • 1 teaspoon pure vanilla extract

Toppings (to be added after freezing):

  • 1/4 cup freeze-dried strawberries, crushed into small pieces

  • 1/4 cup crushed almonds

  • 2 ounces white chocolate, melted

Instructions:


Prepare the Strawberry Base:

  • Place the fresh strawberries, honey or maple syrup, Greek yogurt (if using), and vanilla extract in a blender.

  • Blend until you have a smooth and creamy strawberry mixture.

Assemble the Popsicles:

  • Carefully pour the strawberry mixture into popsicle molds, leaving a little space at the top.

Freeze:

  • Insert popsicle sticks into each mold, and place them in the freezer.

  • Allow the popsicles to freeze for at least 4-6 hours, or until completely solid.

Add Toppings after Freezing:

  • Once the popsicles are frozen, sprinkle over the crushed freeze-dried strawberries, crushed almonds and crushed white chocolate evenly over the popsicles.
