Ingredients
Serves 1
1/3 cup oats
1 tablespoon chia seeds
oat milk
1/2 tsp sweetener or to taste
1/4 thick greek vanilla yoghurt
1/3 cup raspberries, mashed or pureed
30 g good quality sugar free chocolate
2 tablespoons oat milk extra
Method
Place oats, chia seeds and sugar in a jar and pour enough milk to cover the oat mixture, stir until all ingredients are well combined.
Place in fridge overnight or for a few hours until the oats and chia have absorbed the liquid.
When ready to serve, grab the jar of oats and layer with mashed raspberries, then the yoghurt. Set aside.
Melt the chocolate and milk together in the microwave for 1 minute, stir until well combined.
Let the chocolate cool a little, then pour over the yoghurt layer.
Place in freezer for a minute or two until the chocolate sets. Or leave in fridge until ready to eat.
