It's usually not the salad itself that wins us over, its the lovingly assembled dressings and other enhancements that bridges the gap. Here is my quick and easy green salad dressing, made from basil, parsley and cashews. If you prefer other herbs, just add in your favourites.
Ingredients
1/2 cup cashews soaked in water for an hour
1 bunch basil
1 small handful parsley
juice of 1 lemon
1 - 2 tablespoons olive oil
1 tsp maple syrup or date syrup
good pinch salt
1/4 parmesan
Water to thin, start with 2 tablespoons
Method
Drain the cashews. Add all ingredients to a high speed blender. Check the taste and consistency, does it need more water? Does it need more salt. Tweak as needed.
This dressing is fabulous on any salad, vegetables, fish or chicken.
