Quick and Healthy: Delicious Veggie Soup and Homemade Bread Recipe


This soup is perfect for cozy nights or when you're craving something wholesome, bringing together a medley of fresh, vibrant vegetables in a savory broth that's both nourishing and satisfying. Packed with nutrients and bursting with flavor, this veggie soup is not only a treat for your taste buds but also a boon for your health. So, grab your favorite vegetables, roll up your sleeves, and let's get cooking!


Ingredients

1 tablespoon olive oil

1 onion

4 cloves garlic, chopped

4 carrots

6 stalks celery

1 x purple sweet potato

1 x turnip

1 bunch kale trimmed, washed and cut into small strips

1 tablespoon miso paste

1 litre water approximately

1 can chopped tomatoes

Chilli oil for drizzling


Method

  1. Peel and chop carrots, celery, sweet potato, turnip. Try to chop them in roughly even squares.

  2. Place a large pot on the stove, add oil and onion, cook for a few minutes until starting to brown. Add in garlic.

  3. Add in all vegies except kale.

  4. Fry for a few minutes, then add in miso paste, water and canned tomatoes

  5. Simmer until vegies are tender. Then add chopped kale.

  6. Taste for seasoning, add more salt if desired.

  7. Drizzle with chilli oil.
