Pistachio quinoa porridge

This delicious dish is not only packed with protein but also bursting with flavor, thanks to a special ingredient—freshly squeezed orange juice. Why Quinoa?

The key to transforming tricolour quinoa into a delicious porridge lies in one simple trick: cooking it in freshly squeezed orange juice. The citrusy tang of the orange juice infuses the quinoa with a subtle sweetness and a burst of fruity flavor. It's a refreshing change from the typical flavors of traditional porridge, and it’s sure to brighten up your morning.

 

Ingredients


Serves 4

 

1 cup tri coloured quinoa

3/4 cup fresh squeezed OJ

1/2 cup Greek yoghurt

Maple syrup to taste (if desired)

Cup chopped strawberries

Cup blueberries - I used frozen

1/4 cup pistachios

 

Place quinoa and 2 cups water in a pan cook for 15 mins or so until liquid absorbed.

 

Add orange juice, cook for 5 mins until boiling and until liquid is almost absorbed.

 

Set aside for 5 mins until cooled slightly.

 

Stir the yoghurt and maple syrup into quinoa mixture and divide into 4 bowls.  Top with fruit and nuts.
