Ingredients
200g pistachios
4 medjool dates
1 tablespoon coconut oil
about 1/2 cup water
Method
Place all ingredients into a high speed blender, blend until smooth and creamy. Place into a container in the fridge until firm before spreading on your baked items.
The coconut oil enables the icing to firm and mimic the consistency of traditional icing.
Use to ice cakes, slices or as a dip.
To make a sweeter icing, drop a dollop maple syrup into the mix
