Ingredients:


For the Energy Balls:


1 cup pistachio meal (ground pistachios)

1/2 cup almond meal (ground almonds)

1 - 2 tablespoons matcha powder (adjust to taste)

2 tablespoons maple syrup or honey

2 tablespoons coconut oil, melted

1/2 teaspoon vanilla extract

Pinch of salt


For the Cashew Cream Filling:


1/2 cup cashews, soaked for at least 2 hours

2-3 tablespoons coconut cream

1 tsp coconut oil

1-2 tablespoons maple syrup or honey

1/2 teaspoon vanilla extract

Pinch of salt


Instructions:


Prepare the Cashew Cream Filling:


1.    Soak the Cashews: Drain the soaked cashews and add them to a high-speed blender or food processor.

2.    Blend: Add the coconut cream, maple syrup or honey, vanilla extract, and salt. Blend until smooth and creamy. If the mixture is too thick, add a little more coconut cream or water until you reach your desired consistency.

3.    Chill: Place the cashew cream in the refrigerator to firm up slightly while you prepare the energy balls.


Prepare the Energy Balls:


1.    Mix Dry Ingredients: In a large bowl, combine the pistachio meal, almond meal, matcha powder, and a pinch of salt.

2.    Add Wet Ingredients: Stir in the maple syrup or honey, melted coconut oil, and vanilla extract. Mix until the mixture comes together and forms a dough. If the dough is too dry, add a little more coconut oil.

3.    Shape the Balls: Take a small amount of the dough (about 1 tablespoon) and flatten it in your palm. Place a small dollop of the chilled cashew cream filling in the center, then fold the dough around the filling and roll it into a ball. Repeat until all the dough and filling are used.


Optional:


•     Coating: Roll the energy balls in additional pistachio meal or matcha powder for a decorative finish.


4.    Chill: Place the energy balls in the refrigerator for about 20-30 minutes to firm up before serving.
