Pistachio icing




Not all icings are made from sugar, this is my pistachio icing.  Full of great healthy ingredients.  Use as an icing, filling or dip!! It’s DELicious!!!

 

Ingredients

200g pistachios

2 dates

1 tablespoon coconut oil

 About ¼ cup water

 

Method

Place all ingredients into a high speed blender until smooth and creamy.  This will take about 2 - 3 minutes.


Place into a container and store in fridge until firm before spreading on your baked items.  The coconut oil, enables the icing to firm and mimic the consistency of icing.  Use to ice cakes, slices, or use as a dip.  


Variation: To make pistachio milk on demand, place a tablespoon of the icing into one cup of water and mix well.  This will make a delicious cup of pistachio milk to drink or for your breakfast granola.  


Storage: in fridge.

 

Note: if you want a sweeter icing place a dollop of maple syrup into the blender.
