Pistachio Cookies

Ingredients:

  • 3/4 cup pistachio butter

  • 1/2 cup roasted almonds, roughly chopped

  • 1/2 cup dried cranberries

  • 2 tablespoons goji berries

  • 2 eggs (or equivalent in aquafaba for vegan option)

  • 1/2 cup monkfruit sugar (or sweetener of your choice)

  • 1/3 cup oat flour

Toppings Melted sugar free chocolate such as Noshu brand

Goji berries, cranberries and roasted almonds, extra


Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a large mixing bowl, combine the pistachio butter, roasted almonds, dried cranberries, and goji berries. Mix well to evenly distribute the ingredients.

  3. In a separate bowl, whisk together the eggs and monkfruit sugar until well combined.

  4. Pour the egg and sugar mixture into the bowl with the nut and berry mixture. Stir everything together until fully incorporated.

  5. Gradually add the oat flour to the mixture while stirring. Continue mixing until you have a thick cookie dough consistency.

  6. Using a tablespoon or cookie scoop, portion out the dough onto the prepared baking sheet. Leave a little space between each cookie to allow for spreading.

  7. Flatten each cookie slightly with the back of a spoon or the palm of your hand. This will help them bake more evenly.

  8. Bake the cookies in the preheated oven for about 12-15 minutes, or until the edges are golden brown.

  9. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

  10. Once cooled, drizzle with melted chocolate and top with extra goji, cranberries and almonds.
