Pistachio Butter, Oat & Goji Cookies

These Pistachio Butter, Oat & Goji Cookies are the perfect healthy snack—crunchy, naturally sweetened, and packed with superfoods like goji berries and hemp seeds. With a delightful blend of oats, almonds, and apricots, these cookies provide a boost of energy and nutrition without refined sugars or processed ingredients. Whether you're enjoying them as a post-workout treat or a mid-afternoon snack, these cookies offer a wholesome, satisfying bite with every mouthful.


Ingredients:

  • 1 cup rolled oats

  • ¼ cup goji berries

  • ¼ cup chopped dried apricots

  • 2 tablespoons hemp seeds

  • ½ cup almonds (roughly chopped)

  • ¼ cup almond meal

  • 1 tablespoon maple syrup

  • 2 tablespoons pistachio butter (any butter will work)

  • 1 egg white, beaten

  • Pinch of salt



Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. Prepare the dry ingredients: In a large mixing bowl, combine the oats, goji berries, chopped apricots, hemp seeds, almonds, almond meal, and a pinch of salt. Stir well to evenly distribute the ingredients.

  3. Add wet ingredients: Add the maple syrup, nut butter and beaten egg white to the dry mixture. Stir until everything is well combined and slightly sticky.

  4. Form the cookies: Scoop about 1 tablespoon of the mixture into your hands and press it into a cookie shape. Place the cookies onto the prepared baking sheet, leaving a little space between them.

  5. Bake: Bake for 12-15 minutes, or until the cookies are golden and slightly firm to the touch.

  6. Cool and enjoy: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy these nutritious cookies with a cup of tea or as an on-the-go snack!



Feel free to adjust the sweetness by adding more maple syrup or even swapping out the apricots for another dried fruit you love!
