Ingredients:
1 cup rolled oats
¼ cup goji berries
¼ cup chopped dried apricots
2 tablespoons hemp seeds
½ cup almonds (roughly chopped)
¼ cup almond meal
1 tablespoon maple syrup
2 tablespoons pistachio butter (any butter will work)
1 egg white, beaten
Pinch of salt
Instructions:
Preheat the oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Prepare the dry ingredients: In a large mixing bowl, combine the oats, goji berries, chopped apricots, hemp seeds, almonds, almond meal, and a pinch of salt. Stir well to evenly distribute the ingredients.
Add wet ingredients: Add the maple syrup, nut butter and beaten egg white to the dry mixture. Stir until everything is well combined and slightly sticky.
Form the cookies: Scoop about 1 tablespoon of the mixture into your hands and press it into a cookie shape. Place the cookies onto the prepared baking sheet, leaving a little space between them.
Bake: Bake for 12-15 minutes, or until the cookies are golden and slightly firm to the touch.
