PB & J Brownies Recipe



Love the nostalgic flavors of peanut butter and jelly but want a grown-up twist? These PB & J Brownies combine the rich decadence of chocolate with the timeless combo of creamy peanut butter and fruity jam. Made with almond flour, monk fruit sugar, and cold-pressed olive oil, this recipe is a healthier take on traditional brownies without sacrificing flavor. A dollop of mashed raspberries and natural peanut butter swirled on top creates a beautiful, marbled finish that’s as eye-catching as it is delicious. Perfect for a guilt-free indulgence or a fun treat to share, these brownies are easy to make and sure to impress!


Ingredients:

  • 1.5 cups almond flour

  • 1/4 cup cocoa powder

  • 1/4 cup cold-pressed olive oil

  • 1/4 cup monk fruit sugar

  • 2 eggs

  • 3/4 cup raspberries (mashed to resemble jam)

  • 2-3 tablespoons natural peanut butter (no added sugar or salt)


Instructions:

  1. Preheat the oven to 350°F (175°C) and line a small baking pan (approximately 8x8 inches) with parchment paper.

  2. Prepare the batter:

    • In a medium mixing bowl, combine almond flour and cocoa powder.

    • In another bowl, whisk together the olive oil, monk fruit sugar, and eggs until smooth.

    • Gradually add the wet ingredients to the dry ingredients, stirring until fully incorporated.

  3. Mash the raspberries:

    • Use a fork to mash the raspberries in a small bowl until they resemble a chunky jam. Set aside.

  4. Assemble the brownies:

    • Pour the brownie batter into the prepared pan and spread evenly.

    • Dollop small spoonfuls of peanut butter and mashed raspberries alternately on top of the batter.

    • Use a knife or skewer to gently swirl the peanut butter and raspberry jam into the batter, creating a marbled effect.

  5. Bake:

    • Place the pan in the preheated oven and bake for 20-25 minutes, or until the edges are set and a toothpick inserted into the center comes out with a few moist crumbs.

  6. Cool and serve:

    • Allow the brownies to cool in the pan for about 10 minutes before transferring them to a wire rack. Once cooled, slice into squares and enjoy!
