I've been interested in intermittent fasting lately. Whilst fasting has been around for ever, lately there seems to be such a surge in the popularity of fasting. So much so, that I had to give it a go.
To be honest, it doesn't really suit me. I found that I was counting down the hours to my first meal of the day and wishing away my time. I also love food and breakfast and missing out on that meal was also a real problem for me.
So, whilst I don't have any issues with fasting, its not really for me.
Which brings me to this beautiful breakfast - overnight oats, with a luscious pink colour thanks to dragon fruit powder, topped with berries, nice cream, nut butter and pistachios.
I just know you will love this. This recipe is for one, so simple double, or triple as required. I havnt listed quantities for the berries or nut butter so add as much here as you like.
Ingredients
Overnight oats
1/3 cup oats
1 tbl chia seeds
1 tbls yoghurt
1 tsp maple syrup or to taste
1 tsp pink dragon fruit powder
Oat milk or water
dash salt
Blueberries and raspberries
Pistachios
Nut butter
Nice Cream
2 frozen bananas, chopped
1 heaped tsp pink dragon fruit powder
1 tbls oat milk
For the overnight oats, add oats, yoghurt, chia seeds, dragon fruit powder salt in jar and mix well. Add enough milk or water to a loose consistency, remembering that the chia and oats will absorb much of the liquid. Stir until well combined and load into the fridge overnight or for at least a couple of hours.
For the Nice Cream, add all ingredients to a high speed blender until smooth and creamy like soft serve. Add to a container and store in freezer.
To serve, pour your oat mixture into a nice bowl, top with berries and pistachios. Then top with your nice cream and drizzle generously with nut butter.
Eat and enjoy.
