OMG there are days when I get so sick of alllll the breakfast options. When those days come around I make my oaty breakfast cookies. Really tasty, crunchy texture, you absolutely can’t not love them.
Ingredients:
- 1 cups rolled oats
- 1/2 cup chopped walnuts
- 1 cup almond flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1/4 cup coconut oil, melted
- 1/4 cup date syrup
- 1/4 cup unsweetened applesauce
- 1 egg
- 1 tsp vanilla extract
Instructions:
1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
2. In a large bowl, mix together the rolled oats, chopped walnuts, almond flour, baking powder, salt, and cinnamon.
3. In a separate bowl, whisk together the melted coconut oil, date syrup, unsweetened applesauce, egg, and vanilla extract until well combined.
4. Add the wet ingredients to the dry ingredients and stir until the mixture is well combined.
5. Using a cookie scoop or spoon, drop the dough onto the prepared baking sheet, about 3 cms apart. Use your fingers or the back of a spoon to gently flatten each cookie.
6. Bake for 12-15 minutes, or until the edges are golden brown and the cookies are set.
7. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
