These cookies come together in a flash, no fuss and bake into the most delicious cookie. These are my go-to breakfast cookies. I make my oat flour fresh by grinding oats but pre-made oat flour is easy to come by.
Ingredients
1.5 cups oat flour
1/4 cup roasted almonds
1/4 cup goji berries
2 tablespoons melted butter
1 tablespoon each of honey and date syrup
1 tablespoon whole flax seeds
Roughly 50g dark chocolate (use your discretion here)
Preheat oven to 350 F (175C) fan forced. Lined a baking tray.
Mix oat flour, almonds, goji berries, chocolate and flax seeds in a bowl.
In another bowl, combine melted butter, date syrup and honey.
Pour wet ingredients into dry, mix well. The mix should come together nicely and form a ball when rolled between your hands.
Shape into rounds, place on baking sheet.
Bake for 10 to 12 mins until edges are golden brown.

I made this mix into 4 rather large breakfast sized cookies.
