Never fail banana cake

This never fail banana cake is a wholesome twist on a classic favorite, made from ingredients you can feel good about. With ripe bananas providing natural sweetness and olive oil for a soft, moist texture, this cake is both simple and delicious. Ingredients

3 very ripe bananas

2 eggs

1/2 cup oil (I used a mild olive oil)

2 cups self raising flour

1/4 cup hemp seeds

1/2 cup sweetener of choice

1 tsp salt

1/2 to 1 tsp cinnamon

2 tsp vanilla


Instructions

  1. Preheat oven to 180 deg C 325 degrees F.

  2. Mash bananas with a fork.

  3. Lightly beat eggs.

  4. Mix bananas, vegetable oil, eggs and sugar together in a large mixing bowl. Stir until completely mixed.

  5. Fold in the remaining ingredients. Stir very gently until the batter is fully mixed. Don't overmix as this will work the gluten in the flour and make your bread rubbery.

  6. Optional – If you want to enhance this banana bread, you can stir in a cup of your favourite mix-ins (i.e. chocolate chips or chopped walnuts) after you have mixed the batter.

  7. Pour the finished batter into a nonstick bread pan. Smooth out the top of the batter within the bread pan.

  8. Bake in the oven for about 45 minutes or until golden brown and a cake tester removes without any crumbs.

  9. Take out of oven and let the banana bread cool down in the bread pan for 10 minutes. Do not remove the banana bread from the bread pan during this 10 minute cool down period. FYI – Do not skip this step as the "cool down" completes the baking process.
