Mandarin chia pudding with yoghurt and granola

There’s something deeply satisfying about the balance of flavors and textures in this Mandarin Chia Pudding. It’s both light and nourishing, with the tang of mandarin zest brightening each spoonful. The addition of yogurt and granola on top adds richness and crunch, making this recipe a perfect choice for a healthy breakfast or a midday snack that feels indulgent yet wholesome. Whether you prepare it the night before or a few hours ahead, this dish offers a refreshing twist on classic chia pudding.


Note: I added a touch of Turmeric to accentuate the colour, but not enough to alter the flavour.


Ingredients:
  • 2 mandarins (zest and flesh separated)

  • 1 cup non-dairy milk (almond, coconut, or oat milk)

  • 2 tbsp chia seeds

  • 1 tbsp maple syrup

  • 1/4 cup your favourite youghurt (for topping)

  • 2 tbsp granola (for topping)


Instructions:
  1. Prepare the Mandarin:

    • Zest the mandarins and set the zest aside.

    • Peel and segment the mandarins - chop or blend in a blender.

  2. Mix the Chia Pudding:

    • In a bowl or glass jar, whisk together the non-dairy milk, chia seeds, maple syrup, mandarin zest, and chopped or blended mandarin flesh.

    • Let the mixture sit for 5 minutes, then stir again to ensure the chia seeds are evenly distributed.

    • Cover and refrigerate for at least 2 hours or overnight for a thicker texture.

  3. Serve:

  • When ready to serve, top with yogurt and sprinkle with granola for crunch.
