Our low carb pancakes are not only low in carbs but also rich in flavor and texture, making them a perfect guilt-free breakfast option for those following a ketogenic diet or anyone looking to reduce their carb intake. Enjoy!
Ingredients:
1 cup almond flour
2 tablespoons coconut flour
1 tablespoon monkfruit sugar
1 teaspoon baking powder
1/4 teaspoon salt
3 large eggs
1/4 cup unsweetened almond milk (or any preferred unsweetened milk)
1 teaspoon vanilla extract
Butter or coconut oil for cooking
Greek yoghurt and berries for serving
Instructions:
Prepare the Dry Ingredients: In a mixing bowl, whisk together the almond flour, coconut flour, erythritol (or sweetener of your choice), baking powder, and salt until well combined.
Prepare the Wet Ingredients: In a separate bowl, beat the eggs until they are well mixed.
Add the almond milk and vanilla extract to the beaten eggs and whisk until thoroughly combined.
Combine the Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and stir until you have a smooth pancake batter. Let the batter rest for a few minutes to allow the coconut flour to absorb some of the liquid. The batter should be thick but pourable. If it's too thick, you can add a little more almond milk.
Heat the Griddle or Pan: Place a non-stick skillet or griddle over medium-low heat and add a small amount of butter or coconut oil to grease the surface.
Cook the Pancakes: Once the skillet is hot, pour 1/4 cup portions of the pancake batter onto the skillet to form pancakes. Use the back of a spoon to spread them into a round shape if needed.
Cook until Bubbles Form: Cook the pancakes until small bubbles start to form on the surface, which usually takes about 2-3 minutes.
Flip and Continue Cooking: Carefully flip the pancakes and cook for an additional 2-3 minutes on the other side, or until they are golden brown and cooked through.
Serve and Enjoy: Remove the pancakes from the skillet and repeat the process with the remaining batter.
Serve with yoghurt and berries or your favourite fruit.
