Ingredients
1 heaped tablespoon peanut butter
1 tsp olive oil
1 tablespoon each of sunflower seeds, pepitas, cocoa powder
1/4 cup each of pistachio nuts, pecans and almonds
1/2 cup almond meal
1 tsp cinnamon
Method
Heat oven to 180 deg C.
In a pan, add peanut butter and olive oil. Heat until the mixture is runny.
Remove from heat, and place on a heat proof surface.
Add all remaining ingredients, mix until well combined, clumping mixture together.
Spread onto a pan and bake for about 10 mins.
Note: To keep this low GI, I haven't added any sweetener, if you do want to make this a little sweeter, add in some maple syrup or honey to taste with the peanut butter and oil.
