You will be surprised to know that the base of this delicious healthy chocolate mousse is made from pumpkin. Pumpkin is an excellent base for desserts. It has natural sweetness and a velvety texture once blended.
I always get super excited when I develop a new whole-food dessert recipe and this recipe is incredible. It's rich, chocolaty and delicious.
Ingredients
About 3 cups chopped pumpkin (this will cook down to about 2 cups)
70 g best quality dark chocolate
1 tbls cocoa powder
1.5 tbls coconut oil
3 tbls date syrup (or more to taste)
pinch sea salt
1 cup berries
Method
Steam the pumpkin, let it cool and then drain off any liquid before blending. Place pumpkin in a high speed blender, blend until silky smooth. The pumpkin is the base of your mousse, so needs to be silky smooth.
Next, place chocolate in a heat proof bowl, with the coconut oil. Heat for 30 seconds, stir, then heat another 30 seconds if needed.
Add the melted chocolate mixture, cocoa powder, date syrup and salt to the blender with the pumpkin. Blend until everything is combined, silky and velvety. Taste. Does it need more date syrup? Adjust as needed.
Layer into into 4 x half cup glasses, with berries and chill for about 4 hours or overnight.
Note: the reason why we use the coconut oil is to provide a glistening silky texture. It will also firm on chilling providing a mousse-like texture.
