Ingredients:
¾ cup dates, pitted and softened in ½ cup water
½ cup nut butter (almond, cashew, or peanut butter)
1 tsp vanilla extract
¼ cup cocoa powder
¼ cup almond or cashew flour
1 tsp baking powder
Dark chocolate, chopped (for melty chocolate chunks)
Instructions:
Soak the dates in ½ cup water for about 10 minutes until they’re soft. Then blend the dates and water into a smooth paste.
In a mixing bowl, combine the date paste, nut butter, and vanilla extract. Stir until smooth.
Sift in the cocoa powder, almond or cashew flour, and baking powder. Fold gently until well combined.
Chop the dark chocolate into small pieces and fold them into the batter.
Preheat your oven to 175°C (350°F). Line a small baking pan with parchment paper and spread the batter evenly.
Bake for 15–18 minutes, or until the edges are set but the center remains slightly soft.
Allow the brownies to cool for at least 10 minutes before slicing and enjoying.
Tips for the Best Fudgy Brownies
🍫 Use quality dark chocolate – The better the chocolate, the richer the brownies!
🌰 Switch up the nut butter – Almond butter gives a mild flavor, while peanut butter adds a nuttier taste. I used pistachio butter as I had it on hand. I also swirled a little over the top.
