Espresso chia pudding with berries


Start your day with a bold boost of energy and creamy indulgence! This Espresso Chia Pudding combines the rich kick of espresso with the wholesome goodness of chia seeds, topped off with luscious Greek yogurt and fresh berries.


Ingredients

  • 2 tbsp unsweetened Greek yogurt

  • 1 shot espresso (about 1/3 cup)

  • Dash of maple syrup (to taste)

  • 2 tbsp chia seeds

  • Additional Greek yogurt and fresh berries for topping


Instructions

  1. In a bowl or jar, mix the Greek yogurt, espresso, and maple syrup until fully combined and smooth.

  2. Stir in the chia seeds, ensuring they are evenly distributed and creamy. Let the mixture sit for 2-3 minutes, then stir again to prevent clumping. At this point you may want to add a little water or milk if it's too thick.

  3. Cover the bowl or jar and place it in the refrigerator. Let the chia pudding set for at least 30 minutes or overnight for a creamier texture.

  4. Once set, give the pudding a quick stir. Top with a dollop of Greek yogurt and a handful of fresh berries for a burst of flavor and color.
