Eating for Less: Affordable Meal Ideas for Healthy Living


Today, I want to talk about eating well on a budget. I know that many of us are trying to tighten our belts, but that doesn't mean we can't enjoy delicious and nutritious meals.


Firstly, let's talk about planning. It's important to plan your meals ahead of time so that you can make the most of your budget. Look for recipes that use affordable ingredients and plan to make larger batches so that you can have leftovers for lunch the next day.


One of my favourite budget-friendly recipes is my lentil and vegetable soup. It's hearty, healthy, and cheap to make. Simply sauté some onions and garlic in a large pot, add your chopped vegetables (I like carrots, celery, and potatoes), and then add some lentils, vegetable stock, and seasoning. Let it simmer for about 30 minutes, and you have a delicious soup that will last you for days.


Make your own snacks: Pre-packaged snacks can be expensive and often unhealthy. Instead, make your own snacks such as homemade granola bars, trail mix, or hummus. Take a sneak peak of some of my snack ideas below:


  1. Homemade granola bars: Mix together oats, nuts, seeds, dried fruit, and a sweetener such as honey or maple syrup. Bake in the oven until golden brown and then cut into bars. You can also add peanut butter or chocolate chips for extra flavour.

  2. Trail mix: Combine your favourite nuts, seeds, and dried fruit in a bag or container. You can also add chocolate chips or pretzels for a salty-sweet combination.

  3. Energy balls: Blend together dates, nuts, and cocoa powder in a food processor. Roll into balls and refrigerate until firm. You can also add coconut, peanut butter, or spices such as cinnamon or cardamom.

  4. Hummus: Blend chickpeas, tahini, garlic, lemon juice, and olive oil in a food processor until smooth. Serve with raw vegetables, crackers, or pita bread.

  5. Roasted chickpeas: Drain and rinse a can of chickpeas and pat them dry. Toss with olive oil and spices such as cumin or paprika. Roast in the oven until crispy and golden brown.

  6. Apple chips: Slice apples thinly and sprinkle with cinnamon. Bake in the oven until crisp and golden brown.

  7. Yogurt parfaits: Layer Greek yogurt, fresh fruit, and granola in a jar or container. You can also add honey or maple syrup for sweetness.


Another great budget-friendly ingredient is eggs. They are versatile, affordable, and packed with protein. You can make a simple omelette with some chopped vegetables and cheese, or you can make a frittata with leftover vegetables and herbs. I also love making egg fried rice, which is a great way to use up any leftover rice you might have in your fridge.


Finally, don't forget about the power of spices and herbs. They can transform a simple dish into something truly special. A pinch of cumin, coriander, or smoked paprika can add a lot of flavour to a dish, without breaking the bank.
