One of the most liberating times we live in now is the ability to WFA (Work From Anywhere).
The obvious win here is being able to balance work and life, and that commute time can be better spent on more meaningful tasks.
The second thing I love, is being home for my kids when they come home from school.
The third win is I can make decent food without overspending on take-out lunches.
This is my elevated avocado on toast. A step up from my usual avo and vegemite on toast 😊
Wholemeal sour dough, with avo, chickpeas, (I cooked these in a little smoky paprika for 5 mins), cherry tomato (use fresh or pre cook in the oven), cucumber, basil and a swish of balsamic.
To prep the chickpeas and tomatoes:
To make the chickpeas - grab a 70g can of chickpeas in salt, pour into a small pan with 1/2 teaspoon smoky paprika, cook for about 5 - 10 mins until slightly browned.
For the tomatoes, grab a punnet, pour into a small oven proof dish, and cook at 180 for about 15 mins.
For meal prepping, make double the above and use throughout the week.
