Creamy mushroom and spinach pasta

In this version we're swapping out the conventional white pasta for its healthier counterpart, and trust us, you won't miss a thing. Wholemeal pasta is a powerhouse of nutrition packed into every spiral. Let's break it down:

Ingredients

4 cups washed and chopped kale

250g sliced mushrooms

1 onion chopped

4 cloves garlic

500g wholemeal pasta spirals

1 cup cream or almond milk

Parmesan

2 stock cubes of choice dissolved in 1/4 cup boiling water

 

Cook pasta per packet instructions.

 

Add onion to pan, cook for a few mins, then add garlic and mushrooms followed by kale. Cook until kale has wilted, add in dissolved stock cubes. Simmer for a few mins. Add cream.

 

Add drained pasta, stir until until sauce thickens. Serve with Parmesan.
