Cocoa granola with peanut butter


I have a thing for breakfasts, and chocolate... and peanut butter. And crunch! My breakfasts have to have crunch!


This granola recipe is super easy, barely takes any effort at all, just mix all the ingredients, then bake. I put peanut butter and so many things, and this breakfast is no exception... chocolate and peanut butter is a perfect match. You could serve this as a breakfast, or dessert, either way you're going to love it. Now lets get started on the recipe...



Ingredients:

  • 3 cups rolled oats

  • 1/2 cup unsweetened cocoa powder

  • 1/2 cup honey or maple syrup (adjust to taste)

  • 12 tblsp coconut oil, melted

  • 1 tsp vanilla extract

  • 1/2 cup chopped almonds or your favorite nuts

  • 1/2 cup dried cranberries or your favorite dried fruits

  • Pinch of salt

  • Peanut butter to drizzle

Instructions:

  1. Preheat and Prep: Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.

  2. Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, cocoa powder, and a pinch of salt. Mix them together until they're well combined.

  3. Add Sweeteners and Flavor: Pour in the honey or maple syrup, melted coconut oil, and vanilla extract. Stir everything together until the oats are coated evenly.

  4. Spread on Baking Sheet: Spread the mixture evenly onto the prepared baking sheet. Use a spatula to press it down gently. This helps create those delightful clusters in your granola.

  5. Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the granola is fragrant and slightly crispy. Be sure to stir the granola halfway through to ensure even baking.

  6. Add Nuts: About 5 minutes before the granola is done, sprinkle the chopped almonds on top. This prevents them from getting too browned.

  7. Cool and Mix-In: Once your granola is out of the oven, let it cool completely on the baking sheet. Then, break it into clusters and mix in the dried cranberries or your preferred dried fruits.

  8. Serve and Snap: Transfer your homemade cocoa granola to an airtight container. It's ready to enjoy! Don't forget to take a beautiful picture for your Instagram feed before digging in.

  9. Optional Toppings: I like to serve my granola over a bowl of yoghurt, generously drizzled with peanut butter and what ever fruit or berries I have on hand.
