A delicious oaty snack, great for breaky. As an alternate, the slice can be crumbled and used as a granola, serve with yoghurt and blueberries.
2 cups oats
1/3 cup desiccated coconut
1/4 cup seeds (pumpkin, sunflower)
1 tbsp chia seeds
1/3 cup peanut butter
1/4 cup honey
2 tbsp coconut oil
2 tablespoons dark chocolate chopped
METHOD
Preheat oven to 160c
Heat the maple syrup, peanut butter and coconut oil together in a saucepan over medium heat. Stir until the mixture is smoothly combined. Remove from the heat and let it cool.
In a large bowl add all the remaining ingredients except chocolate. Then add in the peanut butter mixture. Mix really well.
Pour mixture into a prepared dish. Press the mixture firmly into the tin so it’s tightly packed together.
Bake for 15-20 minutes or until golden. Top with chocolate as soon as its out of the oven, and whilst the slice is hot. The chocolate will melt. Once melted, swirl with a knife.
Once the slice has completed cooled, slice and store in an airtight container.
