Chocolate, banana and blueberry oat bars

Take oats, cocoa, bananas and blueberries and make these delicious and nutritious bars. This recipe for chocolate, banana and blueberry oat bars brings together the delicious and hearty combination of rich cocoa and oats, resulting in a treat that's both satisfying and nourishing. A great guilt-free breakfast, snack or dessert, delivering a boost of energy and a burst of natural sweetness. No refined sugar, no flour or excess fats, all whole food ingredients. These bars are moist and luscious and can be prepared in 10 mins plus cooking time.


Ingredients

  • 1 and 1/4 cup oats

  • 1 cup water or milk of choice

  • 2 eggs

  • 2 mashed bananas

  • 1/2 cup dried blueberries

  • 4 tablespoons cocoa powder

  • 1 teaspoon baking powder

  • Pinch of salt

  • 1/2 chopped walnuts

  • 1/2 cup sugar free chocolate chips, melted - I used Noshu

Instructions:

  1. In a bowl, combine the oats and water. For a richer version, use milk of choice. Stir well to ensure all the oats are moistened. Let the oats sit in the water for about 10 minutes to soften.

  2. Preheat your oven to 350°F /180°C and grease or line a baking dish 22 x 16 cm with parchment paper. I used a six cup silicone mini loaf pan.

  3. In a separate bowl, beat the egg lightly. Add the mashed banana and cocoa powder to the beaten egg. Mix well until the cocoa powder is fully incorporated and no lumps remain.

  4. Pour the cocoa powder and egg mixture into the bowl with the softened oats. Add the baking powder dried blueberries and pinch of salt. Stir until all the ingredients are thoroughly combined, forming a thick batter.

  5. Transfer the batter to the baking dish or mini loaf pan, and spread it evenly using a spatula or the back of a spoon. Make sure the batter is evenly distributed and smoothed out. Top with walnuts.

  6. Place the baking dish in the preheated oven and bake for approximately 15-20 minutes, or until the bars are set.

  7. Remove the baking dish from the oven and allow the bars to cool completely in the dish. Once cooled, drizzle with melted chocolate.

  8. Serve and enjoy!

Note: Feel free to customize this recipe by adding additional ingredients such as chopped nuts, dried fruits, or chocolate chips, if desired. Simply fold them into the batter before transferring it to the baking dish.
