Ingredients:
1 cup dried apricots
1 cup cashews
1 tablespoon walnuts
2 tablespoons desiccated coconut
For the dark chocolate coating:
¾ cup dark chocolate chips
1 teaspoon coconut oil
Instructions:
Soak the cashews: Place the cashews in a bowl and cover with boiling water. Let them soak for 1 hour to soften. Drain and set aside.
Blend the mixture: In a high speed blender, combine the drained soaked cashews, dried apricots, walnuts, and desiccated coconut. Blend until the mixture becomes sticky and dough-like.
Shape the fudge: Press the mixture into a small lined baking dish or tray, smoothing it out evenly with a spatula.
Chill and set: Place the tray in the fridge for 1-2 hours to firm up. (At this point, the fudge is ready to eat if you don't want to coat the bars with chocolate).
Prepare the chocolate coating: Melt the dark chocolate chips with 1 teaspoon of coconut oil over low heat or in the microwave. Stir until smooth and glossy.
Cut and coat: Remove the set fudge from the fridge and slice it into squares. Dip or drizzle each square with the melted dark chocolate, coating them generously.
Final chill: Place the chocolate-covered squares back in the fridge for about 15-20 minutes until the chocolate hardens.
Store in an airtight container in the fridge for up to a week.
