Cherry Almond Bread (low carb and no refined sugar)

Ingredients:


For the bread:
  • 2 cups almond flour

  • 1/4 cup coconut flour

  • 2 teaspoons baking powder

  • 1/4 teaspoon salt

  • 2 eggs, at room temperature

  • 1/4 cup maple syrup

  • 1/4 cup unsweetened almond milk

  • 1/4 cup coconut oil, melted

  • 1 teaspoon almond extract

  • 1 cup fresh or frozen cherries, pitted and chopped

For the icing:
  • 1/4 cup tahini

  • 2 tablespoons peanut butter (or almond butter for a different flavor)

  • 2 tablespoons maple syrup

  • 2-3 tablespoons almond milk (as needed for desired consistency)

  • Sliced almonds and fresh cherries for topping (optional)

Instructions:

  1. Preheat and Prep: Preheat your oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.

  2. Mix Dry Ingredients: In a mixing bowl, combine the almond flour, coconut flour, baking powder, and salt.

  3. Combine Wet Ingredients: In another bowl, whisk together the eggs, maple syrup, almond milk, melted coconut oil, and almond extract.

  4. Mix Wet and Dry: Gradually add the wet ingredients to the dry ingredients, stirring until well combined and a batter forms.

  5. Fold in Cherries: Gently fold in the chopped cherries into the batter.

  6. Bake: Pour the batter into the prepared loaf pan and spread it evenly. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean. Cool the bread in the pan for 10-15 minutes, then transfer it to a wire rack to cool completely.

  7. Prepare the Icing: In a small bowl, whisk together the tahini, peanut butter, and maple syrup until smooth. Gradually add almond milk until you reach your desired icing consistency.

  8. Ice the Bread: Once the bread has cooled, drizzle or spread the tahini-peanut butter icing over the top. You can sprinkle sliced almonds and add some fresh cherries for decoration, if desired.

  9. Slice and Serve: Slice the bread and serve! It can be stored in an airtight container at room temperature for a few days or refrigerated for longer freshness.
