These chai spiced cookies are deliciously healthy, vegan, quick to make and great for the lunchbox.
1/4 cup coconut oil
1/2 cup coconut sugar
2 tbl maple syrup
1 cup almond meal
2/3 cup oat flour
1 tsp each cinnamon, cardamom, ginger, all spice
2 tsp baking powder
2 tsp plant milk
Heat oven to 180 deg C.
Mix together the oil, maple and sugar to a paste then add all other ingredients except the plant milk. Mix gently then add the plant milk slowly as you may not need the entire amount.
Rest in fridge for 30 mins. Shape into small balls, flatten slightly, then bake in oven for approx 20 mins. Check at 15 mins.
Cool then top with nut butter and raspberries.
