This is wickedly delicious and to be honest, feels a little indulgent. A rather long list of ingredients but easy and no special skills required 😊. The last time I cooked this, I sat down to a full bowl full.
Ingredients
1 head cauliflower, cut into florets
1 c brown rice flour or other favourite flour
1 cup water of plant milk
2 tbsp fresh orange juice
½ tsp garlic powder
Sauce
¾ cup fresh orange juice
½ c water
1 tbsp orange zest
2 cm piece ginger
2 or 3 garlic cloves
1 tbsp chili sauce
1 tsp rice vinegar
2 tbsp soy sauce
1/4 cup or to taste maple syrup
1 tsp cornstarch + 2 tbsp water
To serve
Green onions
Broccolini
Jasmine rice
Method
Combine ingredients for batter in a large bowl. If too thick add extra liquid. Pour in cauli and toss. One by one, transfer cauli to two parchment lined trays. Don’t overcrowd. Bake at 180 for 30 mins. Or place in air fryer in batches for 12 to 15 mins.
Puree ingredients for sauce except corn flour in a blender until smooth. Pour into small saucepan over low heat. Simmer for 5 – 10 mins. Combine cornflour and water and stir into sauce to thicken.
Remove cauli from oven, pour into large bowl. Pour over sauce and toss to coat.
Serve with rice and vegies.
