Could this be the best soup ever? Maybe. Its delicious, satisfying to make and looks so fabulous. There is something about soup that is so virtuous – so easy to pack it with all the good stuff.
Ingredients
2 punnets cherry tomatoes
4 or 5 vine ripened tomatoes - quartered
1 onion chopped
1 capsicum chopped
2 carrots peeled and chopped
6 gloves garlic or more if you like
1 tsp dried oregano, basil, smoked paprika, chilli flakes
salt
Sprigs fresh rosemary
Coconut milk
Method
Put all above ingredients except coconut milk in a baking dish. Make sure its deep enough to capture the lovely juices from the tomatoes. Cook in 180 deg oven for 45 minutes. Once cooked, cool a little then blend till smooth. Add in coconut milk as desired.
