Banana walnut muffins

Inspired by the timeless allure of classic baking, our Banana & Walnut Muffins embody a marriage of texture and taste that tantalizes the senses. Each bite unveils a delicate balance of moist, banana-infused crumb, interwoven with the rich, earthy notes of walnuts – a testament to our commitment to honoring the classics.


These muffins are fantastic for breaky, with a dollop of yoghurt. This recipe makes 4 large Texas sized muffins.


Ingredients:

2 very ripe bananas, mashed

1 cup self raising flour

1 egg

1/2 cup of milk or plant based milk

1/4 cup extra virgin olive oil

3/4 chopped walnuts

1 tablespoon flaxseeds (optional)


Method

Preheat oven to 180 deg C.

Combine the banana, milk, oil, and egg in a bowl and mixed until well combined.

Add flour, walnuts and flax seeds if using and gently stir until combined, being careful not to overmix.

Place into muffin pans and cook for about 25 mins until golden brown.
