2 eggs
1 cup flour
1 cup ground pistachios (reserve 2 tbsp for topping)
4 tsp baking powder
6 pitted dates
¼ cup milk of choice
3 ripe bananas, mashed
100g dark chocolate, chopped (for topping)
Method
Preheat your oven to 180°C (350°F). Line a loaf tin with baking paper.
Blend the dates and milk together into a smooth paste.
Whisk the eggs in a large bowl, then stir in the mashed bananas and the date paste.
In a separate bowl, combine the flour, ground pistachios (reserving 2 tbsp for the top), and baking powder.
Fold the dry ingredients into the wet mixture until just combined.
Pour the batter into the prepared tin, then sprinkle the top with chopped dark chocolate and reserved pistachios.
Bake for 35–45 minutes, or until a skewer inserted in the center comes out clean.
Cool completely in the tin before slicing and enjoying.
