Banana, chocolate and walnut bread


  • 3 ripe bananas, mashed

  • 1/4 cup vegetable oil (e.g., coconut oil or canola oil)

  • 1/2 cup brown sugar or coconut sugar or your favourite sweetener

  • 1 teaspoon vanilla extract

  • 1 cup all-purpose flour

  • 1 cup almond meal

  • 4 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1/2 teaspoon ground cinnamon

  • 1/2 cup chocolate chips

  • 1/2 cup chopped walnuts

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a standard-sized loaf pan.

  2. In a large mixing bowl, combine the mashed bananas, vegetable oil, brown sugar, and vanilla extract. Mix well until the ingredients are evenly incorporated.

  3. In a separate bowl, whisk together the all-purpose flour, almond meal, baking powder, salt, and ground cinnamon.

  4. Gradually add the dry ingredient mixture to the wet mixture, stirring until just combined. Be careful not to overmix; a few lumps are okay.

  5. Gently fold in the chocolate chips and chopped walnuts into the batter.

  6. Pour the batter into the prepared loaf pan, spreading it evenly.

  7. Bake in the preheated oven for about 50-60 minutes or until a toothpick inserted into the center comes out clean or with a few moist crumbs (avoid chocolate chip or walnut chunks). Baking time may vary, so start checking around 50 minutes.

  8. Once baked, remove the banana bread from the oven and allow it to cool in the pan for about 10-15 minutes.

  9. Carefully remove the banana bread from the pan and transfer it to a wire rack to cool completely.

  10. Once fully cooled, slice and enjoy your delicious vegan chocolate chip walnut banana bread!

Note:


  • Make sure the bananas are ripe; they should have brown spots on the peel for the best flavor and sweetness.

  • You can adjust the amount of sugar according to your taste preferences.

  • Feel free to swap out the chocolate chips and walnuts for other mix-ins like dried fruits, shredded coconut, or seeds.

  • Store any leftovers in an airtight container at room temperature for a few days or in the refrigerator for longer shelf life
