Ingredients:
1.5 cups oat flour
2 tsp baking powder
2 eggs
1/2 cup oil of choice (olive, coconut etc)
2 tablespoons monkfruit sugar (or preferred sweetener)
1 tsp vanilla extract
1 ripe banana, mashed
1 apple, peeled and chopped
1/2 cup dried blueberries
1/4 cup fresh or frozen blueberries (for decoration)
2 tablespoons pine seeds (for decoration)
Instructions:
Preheat your oven to 350°F (175°C). Grease a 17 cm x 10 cm loaf pan or line it with parchment paper for easy removal.
In a large mixing bowl, combine the oat flour and baking powder. Mix well to ensure they are evenly combined.
In a separate bowl, beat the eggs until they are light and fluffy. Add the oil, monkfruit sugar, and vanilla extract. Mix until the ingredients are well incorporated.
Gradually add the mashed banana to the wet ingredients, stirring gently until smooth and combined.
Slowly incorporate the dry ingredients into the wet mixture, stirring gently until the batter is smooth and free of lumps.
Fold in the chopped apple and dried blueberries, ensuring they are evenly distributed throughout the batter.

Tips:
I made my own oat flour, by adding 1.5 cups to a high speed blender. I find there is more texture with making my own flour.
