Baked oats with chocolate and peanut butter



If you’re a fan of breakfasts that taste like dessert, these baked oats are about to become your new best friend! Try experimenting with your add ins and toppings for a flavor hit.


Ingredients


Version 1 (no eggs or banana)

1/2 cup rolled oats

1/2 cup oat milk

1 -2 tbls date syrup or favourite sweetener

1 tsp vanilla extract

1/2 tsp baking powder

pinch salt


Mix ins and toppings

choc chips

blue berries

nut butter

almonds, pecans or any other nuts


Method


  1. Preheat over to 180 deg C.

  2. Place the oats in a bowl and cover with the milk. It should just cover the oats. Sit for a few minutes for the oats to absorb the milk.

  3. Add the date syrup, vanilla extract and baking powder. Mix well to combine.

  4. Add to oven proof dish. Top with your desired toppings and mix ins

  5. Cook for about 15 mins until set. Top with nut butter.

Optional - add the berries and nuts into the mixture before baking.


Version 2

1/2 cup rolled oats

1 ripe banana

1 large egg

1tbls date syrup or favourite sweetener

1/2 tsp baking powder

pinch salt


Mix ins and toppings

choc chips

blue berries

nut butter

almonds, pecans or any other nuts


Method

  1. Preheat oven to 180 deg C.

  2. Place all ingredients into a blender

  3. Transfer to heat proof dish.

  4. Add to oven proof dish. Top with your desired toppings and mix ins

  5. Cook for about 15 mins until set. Top with nut butter.
